Bacon-Wrapped Mushrooms


 Serves 4 - 6


  1. 12 mushroom heads (remove stems)

  2. Beef cut into 12 cubes (do not use stewing beef)
  3. 12 Rashers of bacon
  4. Sprigs of thyme
  5. 2 Tbsp olive oil
  6. ½ tsp crushed garlic
  7. ½ Tbsp lemon juice
  8. 1 tsp balsamic vinegar
  9. 1/2 tsp salt
  10. dash of pepper


    1. Mix oil,  garlic, lemon juice, vinegar, salt and pepper.

    2. Marinade beef cubes in oil for a few hours.
    3. Saute mushrooms very gently in a little oil or butter, only for a minute.
    4. Remove mushrooms without breaking them, and set aside.
    5. Add oil to pan and increase the heat.
    6. Fry beef cubes lightly in hot pan.
    7. Roll beef cubes, mushrooms, and a sprig of thyme in each rasher of bacon.
    8. Secure with toothpicks.
    9. Grill in oven until bacon is fairly crisp.
       Serving suggestions:
      Serve with fried onion rings or serve as snacks on a platter.
