Cheesy Broccoli & Mushroom Chicken

   Serves 4


  1. 4 boneless, skinless chicken breasts halves
  2. 1 tbsp oil
  3. 2  tbsp butter
  4. 1 tsp crushed garlic
  5. 2 cups broccoli florets, chopped into pieces
  6. 1 cup sliced mushrooms
  7. 1 tsp grated ginger
  8. salt and pepper
  9. 1 ½ cup half-and-half cream
  10. ½ cup grated Parmesan cheese
  11. 1 tsp red pepper flakes


  1. Pound the chicken till about ½ inch thick. Salt and pepper
  2. Heat oil and fry the chicken pieces over medium heat for about 4 minutes on each side. Remove from pan.
  3. Add butter to the pan. Lightly saute garlic, ginger, mushrooms and broccoli over medium heat until the broccoli is almost soft.
  4. Pour in the cream, lowering the heat of the pan. Let mixture simmer while continually stirring.
  5. When the mixture thickens, add Parmesan cheese and red pepper flakes. Add a little salt and pepper if desired.
  6. Add chicken pieces back in, covering them with veggies and sauce. 
Serving suggestions:
Serve with rice, mashed potatoes, or pasta.
Sprinkle grated Parmesan cheese on serving.
Optional: sprinkle more red pepper flakes or freshly ground black pepper on serving.
