Easy Creamy Mushroom Toast

    Easy Creamy Mushroom Toast [Makes 2 servings]


    1.  2 tablespoons butter (3 cups) thinly sliced mushrooms
    2. 1/2 teaspoon chopped thyme
    3. 1 garlic crushed clove
    4.  Salt and pepper
    5. 1 tablespoon sour cream (or full-fat milk)
    6. 2 thick slices country bread, for toasting
    7. Chopped parsley for garnish


    1.  Melt butter in a flat pan. Add garlic and mushrooms.
    2. Stir until lightly browned, 6 to 8 minutes.
    3. Add thyme, salt and pepper and sauté for a minute more.
    4. Add sour cream/milk and let mixture simmer 2 minutes.
    5. Meanwhile, toast bread slices until golden.
    6. Lightly butter them or smear with cream cheese.
    7. Spoon the creamy mushrooms onto toasted bread.
    8. Garnish with chopped parsley.

     Variation for adults:

    1. Splash of sherry or Marsala (optional)
    2. Fry the mushrooms in bacon fat; stirred through a rich, creamy sauce and finished with fresh chives – This is not your regular creamy mushrooms on toast!
