Mushroom Beef Rissoles

 

  

 Serves 4 - 6

 Ingredients:

  1. 1 tbsp olive oil
  2. 1 tsp crushed garlic
  3. 1 medium onion (finely chopped)
  4. 1 lb ground beef (or ½ beef, ½ pork)
  5. ½ cup grated carrots
  6. 2 cups chopped mushrooms
  7. 1 cup breadcrumbs or oats
  8. 1 tbsp Worcester sauce
  9. ¼  tsp paprika
  10. 1 tsp oregano
  11. 1 tsp thyme
  12. large tbsp chopped parsley
  13. ½ tsp crushed red pepper
  14. Salt and pepper to taste 

* Baking tray (grease or spray with cooking oil)

 Instructions:

  1. Heat oven to 350 degrees F.
  2. Lightly saute garlic and onion in olive oil. Cool down.
  3. Use your hands to mix beef, carrots, mushrooms together.
  4. Add onion mix.
  5. Add breadcrumbs or oats.
  6. Mix in Worcester sauce, paprika, oregano, thyme, parsley, red pepper, and
  7. salt and pepper.
  8. If the mixture is too wet, add breadcrumbs.
  9. Use heaped tablespoon of mixture to roll into balls.
  10. Flatten the ball with the thumb to make them look like rissoles (not quite as round as meatballs).
  11. Bake in oven on the baking tray for about 20 – 25 minutes.

 Serving suggestions:

Serve with a side of sweet potato fries or mashed potatoes.
Add gravy.
