Gourmet Mushroom Veggie Burger


 Serves 4 - 6


  1. 8 oz. raw chopped oyster mushrooms
  2. 2 tbsp olive oil
  3. 2 tsp minced garlic 
  4. ½ chopped onion
  5. tsp salt
  6. ½ tsp black pepper
  7. 1 cup half-mashed veggie such as broccoli or cauliflower
  8. (keep some pieces chunky for texture)
  9. 2 cups cooked black beans (mash 1 cup)
  10. ½ cup dry bread crumbs
  11. ½ tsp dried oregano/ basil/ rosemary
  12. 1 tbsp Worcester sauce
  13. ½ cup shredded Parmesan cheese 


  1. Lightly saute garlic and onions in olive oil in a large skillet over medium heat.
  2. Add mushrooms, salt, pepper, and oregano/ basil/ rosemary.
  3. Cook for about 10 minutes so that juice can evaporate.
  4. Pour mixture into a large bowl.
  5. Add veggies, black beans, bread crumbs.
  6. Stir in cheese and eggs.
  7. Let mixture rest for about 15 minutes while moisture is being absorbed.
  8. Keep a bowl of water ready for dipping your hands into (little veggie oil will also work).
  9. Form patties.
  10. Pour a little olive oil in the same skillet and fry the burgers.


Serving suggestions:


* on salad or on a bun

* with guacamole, hummus or steak sauce

topped with a fried egg
